tomato couscous

this is a really fast meal and so easy! I could also call this recipe ‘yummy vegan food for dummies’. I like to make it when I have no time, so perfect for students! But also reeeeally delicious, so not just for students, but for everyone! 🙂 try it! 

total time: less than 10 minutes

you need: (serves 2)

  • handful of cherry tomatoes (sliced in half)
  • 1 onion (cut in tiny pieces)
  • 5x asparagus (I bought mine ready in a glass, cut in pieces)
  • 3 tbsps chickpeas
  • 1 carrot (peeled, cut in slices)
  • spices : 1/2 tsp nugmet, 1 tsp spicy paprika, 1/2 tsp cayenne pepper
  • juice of 1 lemon
  • 1 cup tomato juice
  • 1 cup couscous


  1. fry tomatoes, onion, asparagus and carrot in a pan
  2. meanwhile mix the tomato juice with the lemon juice and pour in a pot
  3. bring the mix to boil and add nugmet and paprika
  4. add the couscous to the tomato juice and let it soak (should take about 2 minutes)
  5. add cayenne pepper to the  vegetables in the pan
  6. add vegetables to the couscous and mix
  7. add chickpeas and mix
  8. you’re done! 🙂

you can easily take this with you for lunch 🙂 enjoy!
