vegan stuffed paprika

The first time I ate stuffed paprika was in my first month as a vegan, and it became one of my favourite meals immediately. My first one was stuffed with couscous, the second with veggies only, many other creations followed, but I never wrote them down.. Today I did! So here’s my vegan stuffed paprika with RICE! Definitely worth a try 🙂 

prep time: 5 minutes                         cooking/baking time: about 15 minutes (only 3 when using pre-boiled rice!) + 15min.

you need: (serves 1)

  • 2 bell peppers
  • 1 onion
  • 1 bag of brown rice (or one serving pre-boiled rice, I like uncle bens!)
  • about 100g smoked tofu
  • some mushrooms
  • 2 tsps mustard
  • 2 Tbsps soy sauce
  • spices : 1/2 tsp cayenne-pepper, 1 tsp sweet paprika, 1/2 tsp nutmeg

how to:

  1. preheat oven to 200°C
  2. start by cooking the rice following the instructions on the product (or heat the pre-boiled rice)
  3. meanwhile cut the tofu into cubes , slice the mushrooms and cut the onion in tiny pieces
  4. heat a pan with some a little oil in it (preferably coconut oil)
  5. fry mushrooms, onion and tofu until slightly brown, then add the rice
  6. let it roast for a few minutes, stir frequently then add the soy sauce, stir again for another minute, now add the spices, stir, and set aside
  7. wash the paprikas, cut off the ‘heads’ and remove all seeds and ‘flesh’
  8. spread 1 tsp mustard in each paprika
  9. fill the paprikas with the fried rice
  10. put into a baking form and bake for 15-20 minutes
  11. serve with salad, bread, more veggies or whatever you like!
