my favourite filled paprika!

also an old recipe I found today, this is one of my all-time-favourites. When school wasn’t this stressful I had this for lunch quite often, now it’s rather a dinner since it takes a little time. Hope you like it! 🙂 you need: (serves 1)

  • 2 paprika
  • 1 cup couscous
  • 1 cup tomato juice
  • spices: pepper, chili, cayenne-pepper, sweet paprika
  • 3 tbsps corn
  • 3 tbsps kidney beans
  • 1/2 onion, cut in tiny pieces
  • 2 tsps mustard
  • 250ml vegetable broth

how to:

  1. preheat your oven to 200°C
  2. cut of the heads of the paprikas, wash and empty
  3. bring the tomato juice to boil, add the couscous and mix well, let it soak for about 2 minutes
  4. add the spices (about 1/2-1 tsp of each)
  5. add onion, corn and kidney beans
  6. spread the mustard in the inside of the paprika (1 tsp in each)
  7. fill paprikas with couscous
  8. fill a small ovenproof dish with vegetable broth and place paprikas in it
  9. bake for about 20min
