{EN} vegan fat free pumpkin soup

This is not only a soup, this is so much more. You can use it as pasta sauce, rice sauce, potato sauce.. you can use it in a casserole or you can pour it over people who say eating vegan and healthy is hard. 

you need:

  • 1 Hokkaido (with skin,diced, seeds removed)
  • 3 carrots (washed and diced)
  • 1l vegetable broth
  • garlic (minced)
  • 1 onion (diced)
  • spices (pepper, basil)

how to:

  1. In a large pot heat up some water
  2. add onion and garlic to the pot and let it cook for about 2 minutes
  3. now add carrots and pumpkin and let it cook for another minute
  4. pour the broth into the pot until carrots and pumpkin are covered
  5. cook for about 20 minutes (or until veggies are tender) over medium heat
  6. transfer to your blender and blend until smooth
  7. pour the soup back into the pot and add spices as desired
