{EN} #getyourgreensin couscous

Coucous is one of my favourite dishes when I am in a hurry. It’s quick, it’s healthy,it’s delicious and it’s satisfying. Lately I’ve been trying to up my intake of greens, so I thought of a green couscous dish and it turned out AMAZING! And it only takes 8 minutes! Here’s the recipe 🙂 

You need:

  • 100g or more (dry weight) couscous
  • the same volume of vegetable broth
  • 2 handfuls broccoli
  • 3 handfuls mâche (or greens of your choice)
  • 1/2 zucchini (sliced)
  • 40g chives (cut in tiny pieces)
  • 3 cloves garlic (diced)
  • 1/2 onion (diced)
  • spices: pepper, chili, oregano, paprika


  1. start by cooking the broccoli until tender, drain and set aside
  2. bring the vegetable broth to a boil, then add the couscous and stir for about 3 minutes or until the broth has been soaked up
  3. add chives, garlic, zucchini and onion (you can also ‘fry’ them with some water first) and mix well
  4. add spices, taste test to find the perfect amount
  5. combine with broccoli and serve with mâche

this only took about 8 minutes, and there you are with a perfectly healthy delicious satisfying meal, but veganism is hard right? 😉
